jiffy mix


I have to thank Brandon's daycare for this food find. They had muffins one day and I found out it was the jiffy muffin mix made with soy milk and egg replacer. What an awesome food find! Not only are they cheap but they are super easy to make. We tried the blueberry muffins and Brandon had no problems eating them up. I also enjoyed them with my morning coffee. They also have a brownie mix and a corn muffin mix.

cinnamon rolls


This was my first attempt to make cinnamon rolls and I honestly think my husband was kind of impressed with my baking skills after how these turned out. He kept asking me if there was icing for them when he saw them come out of the oven. We couldn't get our son to try them but my husband ate his fair share of them so it wasn't a complete waste of time to make these. I followed the recipe and used bananas. You can taste the banana slightly but I have to say our family really enjoyed them.

granola bars



I have been on the lookout for milk, egg and peanut free granola bars and haven't found anything I'm crazy about. I have tried ordering some but it took about 3 weeks to get them and you have to buy them in bulk. I wanted to find some that would be a little easier to find/make.

I love the website www.allrecipes.com and found a great recipe called Playgroup Granola Bars

I didn't have the wheat germ so I used another 1/4 cup flour instead like one of the reviewers suggested and tried 1/4 cup applesauce for the egg. I also used Enjoy Life chocolate chips instead of the raisins. They look great and the whole house smells of cinnamon and sugar!

kashi cereal bars


I was pretty excited to find out Brandon could eat these after finding them on a couple of different websites. They are milk/egg/peanut free. They do contain wheat and soy which B can have. We have tried the apple and the blackberry bars but I'm sure the strawberry ones are good too. Brandon seemed partial to the blackberry ones. I have also thought about making granola bars from scratch since they are hard to find milk free. There are several recipes on allrecipes.com and I can add some milk free chocolate chips.

I have been on a mission to make Brandon chocolate chip cookies. He is not really a sweet eater and I thought he might like something different. I checked the health food store and the only chocolate chips said "may contain milk". I really wanted to try the enjoy life chips but have been procrastinating ordering them online and was hoping Kroger might start selling them one day. Then I went on my weekly trip to Walmart and noticed they have a gluten free cooking section. Who has ever heard of such a thing! Guess what they had the chips! And they were only around 3 dollars! They were REALLY good too! I found a chocolate chip recipe from Food Allergy Mama and it had to be one of the best chocolate chip cookies I have ever tried! I even got Brandon to eat about half of a cookie.

I also want to try the soy butter cookies. My favorite all time cookie is the peanut butter blossom and I never imagined being able to make them until I saw this recipe. Awesome website for dairy/egg/nut free sweets. I can't wait to get her cookbook when it comes out in October!

meatloaf recipe


I have been searching for a suitable meatloaf for my son when I came across a recipe on Eat Freely I have to say I'm impressed. The picture doesn't do it justice - it is really good. It has really gotten me rethinking the all the recipes that have eggs in it. They basically leave the eggs out and guess what? it is milk/egg/nut free. I tried making the recipe tonight and it came out great. I love being able to have the smaller portions for my son and I can freeze the leftovers so I have 3-4 more meals done for another day. I think that has been my biggest challenge so far is finding the time to try new recipes and be able to cook them during the week night. We usually have about a 20 minute time frame from getting home till eating dinner and cooking a complicated recipe is just not an option.

this weeks food finds


Brandon really has a thing for raisins. I'm not sure if it's because of the little red box they come in or that he just really has a thing for fruit. I came across a new find this week - ocean spray craisins. They are cranberries sweetened with sugar. I did not know what to expect with cranberries being tart but after talking to a few people we decided to try them out. I got a package of the 100 calorie packs since B is really into eating out of the little packages. He tried one and then would not give up the package. A snack success! He liked them just as much as those gerber fruit snacks. They are also a great subsitute for chocolate chips and/or raisins in cookies. I haven't found any dairy free chocolate chips that aren't from the health foods store and sometimes it's hard to find the time to go there since the location is out of the way for us. They also have a clearly marked label that they are also made in a nut FREE facility.
